I guess they assume that people know their GTS is 10mm lower in Normal to begin with and so the generic settings remain the same. Converse is true for CT models which are 10mm higher.

Low features as default height when in both Range and Sports Plus where the latter in itself is really intended for track usage. Autobahn may feel like a racetrack but it isn't given the many other users on the road.
If specifically on an Autobahn then Normal drive mode would seem logical. Ride height adjusts at speed (lowers) as you know. Low ride height increases tyre wear so setting the car lower can have an unwanted side effect.
I can't remember if the setting is automatic based on your geolocation and so if in EU it should keep the lights inverted.
