You can set the color manually, but the best way to use ambient lighting is to enable the option to have it match the music. Specifically, it changes the ambient lighting to match the album cover for the music that is playing. So if the album cover is largely fuchsia, the ambient color is fuchsia, if it's largely red, you get red. It is one of the best options for the vehicle.
