So I figured out how to get three legit kid seats in the back of the Taycan. Some formulae work for some cars and not for others, so I think I'd share mine:
Center: Clek Fllo. It mounts rear-facing without the LATCH system (Taycan doesn't have it in the center.) It's narrow, and works from infant to toddler.
Sides: Clek Foonf. Designed specifically for three-across, it's also narrow, but still comfy for my 4-yo.
I am showing the pics with just one Foonf but you'll see the Fllo is perfectly centered so another Foonf fits easily on the other side. You won't be able to fit the Foonfs by using LATCH, only by seatbelt, because they do need to get nudged out towards the doors a bit.
The center Fllo needed three pieces of high-density 3/4" foam under its rear-facing "foot" in order to achieve in-spec tilt per the installation instructions.
There is about in inch between the side seats and door. You can still see out the back with the rear view mirror. All is well in the world.
Now when you head out on that hike, you can bring the whole family of 5 + dogs in the Taycan CT! I don't usually take pics on "lifted" mode, but here ya go. (By the way, just joking by calling this "off-roading." I mean technically it's not on a road...)
