There are a few cars with the GTS Interior Package in (Carmine Red|Chalk) with actual (non-configurator) photos currently in dealer inventory on the Porsche website:

From the first car (GTS Interior Package in Carmine Red):

Since these are actual photos (and there are more to browse in the galleries in the above links), I think it answers the question of where the stitching is applied?
Note: I wasn't able to find any examples that have the GTS Deviated Stitching Interior Package, but I think the GTS Interior Package in (Carmine Red|Chalk) is conclusive enough as I believe the latter to be a superset of the former (the latter also embroidering the "GTS" logo on the headrests, the stitching and Porsche logo on the floor mats, etc.).
(I have a GTS with the GTS Interior Package in Carmine Red on order, so I've obsessed plenty over this stuff.)
