TL;DR
75% SOC - 0-60 in 3.0sec (AC on)
50% SOC - 0-60 in 3.0sec (AC on)
25% SOC - 0-60 in 3.1sec (wouldn't go into launch mode)

I'm shocked it did so well at such a low SOC

Why are you shocked (pun intended)? Porsche highlighted this from day one and pretty much every single automotive journalist in the universe has quoted Porsche on this.

Why are you shocked (pun intended)? Porsche highlighted this from day one and pretty much every single automotive journalist in the universe has quoted Porsche on this.
Cause I've seen it at 35% that didn't do the stated numbers.
I believe Porsche even states this

You will have reduced acceleration (even without Launch Control) below 25% SOC. Extending that table to 20% and 15% would be interesting. I have not seen a reduction until 25% though I also haven't tried LC except in the 70% - 85% range.
