Why can't I close trunk with the remote?

Yes, it does.
But I have had my head banged when I push the 'close' button, then grabbed the last package with my free hand and 'WHACK', got hit on the head when I didn't move fast enough.
In this particular usecase, it sounds like it would have been safer to close it with a remote. ?

PS) I have banged my head a few times on my Teslas, but that was when opening the tailgate - didn’t open all the way before I dove in, and one time it fell back down (the lift cylinder failed in super cold weather).

Have you tried using your head as an antenna? Place the fob against your head and press the button (as ably demonstrated by none other than Jeremy Clarkson) and you will be amazed.
I couldn't believe this when I first heard it several years ago. So I tried it out from a distance that I thought 'no way'. And sure enough it worked!! And it works on all cars/fobs. Think of it.............me at 5'6" am tall enough to be an antenna!!!

It's not your height that matters, it's the size of your head. ;)

My X5 enables the boot to be closed by the usual press and hold of the relevant button, I have resisted from enabling this feature when my children have their heads near the boot...That said, it is actually the waving your foot under which can be dangerous if the kids are running around the back of the X5.

It is hard to see it is safety as you can remote close the windows.

Panamera was the same though - so it is a deliberate decision, just the wrong one!

Windows and the boot / trunk / tailgate have anti-trap measures but Porsche / VAG must have had some prior history on this and decided to not implement any other methods than the ones currently offered

It would be nice to stand as far away as possible and hit that 'trunk' button. I've hit my head on the truck lid of my Tesla Y more times I care to remember. When I open the truck in my garage, the trunk stops about eye height. BANG!
You would think I'd learn ...

Yes, on the Tesla model Y you can program the trunk lid height and I needed to reprogram it otherwise the truck door would hit my garage door (I dented the trunk door twice on my garage door before I finally caught on).

But due to the placement of my garage door, the inner part of the trunk lid is eye level. The outer part is higher and just skims the garage door.

The foot gesture approach would avoid these mishaps where comfort access has been optioned and gesture opening / closing has been enabled.

Maybe…but when you have to take out something far inside the trunk, you have to step as close to the car..so “foot gesture” might be a problem?

I think it would be anatomically impossible to do the 'shimmy' whilst extracting the hidden depths of the trunk. Would make for humorous Tiktok video ? though!
