the only time a low SOC would have "visible" impact is if you were doing launches at a low SOC, driving shouldn't see any impacts. when you reach a very low SOC it would be wise to slow it down in order to reach a charger.
My Taycan does not allow LC with low SoC (below 20% ?).

IMHO, “the biggest” deal is that one can’t buy Taycan at all….i mean, delivery dates are postoponed, or orders even being cancelled…
My dealer has ~10 in stock - nicely spec'd. I ordered one 4/1/21 and it was at the dealer on 5/27/21.

I think @XLR82XS got lucky. Most posts I saw had longer deliveries and many people, myself included, did have delays.

I do see a fair number of new Taycans at my local dealer though. 15 of them.

Zero 911s or 718s though, which is rare. I ended up scheduling time at PEC ATL to get some test drives.

Turbo here - won't see obvious decline in full power until really high battery temp (> 120 deg F) or < 15% SOC. Even at 5% SOC it's plenty fast, just not as fast. You WILL have less max power for launch control though below 50%, but again it might be going from insane to ridiculous.

One note on Li-Ion battery voltage - they don't discharge the same way lead-acid does - meaning you can't derive state of charge from cell voltage, except for (somewhere around) > 90% and (somewhere around) < 10%. In between, the voltage remains at the nominal cell voltage for a very wide range of SOC. Plus there's the non-usable buffer, which could be at the high end, low end, or both.
