Some extras seem to be nice to have when ordering but once you use the car for a few months you realize you never use them.
Think HUD if you drive with your sunglasses on or adaptive lights for an urban-only driver.

Which ones you wouldn't order again?

no - Porsche Charging Dock
no - Porsche Charger (PMC+ or PMCC) - cheaper/better non-Porsche EVSE options
no - Glacier Blue “option” - would still order the lights - just not the glacier blue
no - Innodrive - would just order ACC & ALK
no - all season tires - would get summer tires
no - smoking package (used to include an extra 12V outlet - no longer)
[Update May 2021] - no - PCCB's - they are pointless on a vehicle that can't do more than a handful of track laps at full pace before needing to "rest" for battery thermals.

maybe skip - passenger display
maybe skip - advanced 4 zone climate controls

Porsche charger: agree. Porsche Mobile Charger Connect was a mandatory option in the U.S. for model year 2020, but is no use if you live in a high rise with convenient public charging. It is bulky to take on trips.

All season tires: good to have for general winter driving on the wheels you order with the Taycan if you plan to separately purchase custom wheels with summer tires.

Agree on all counts, but the PMCC was a non-optional option in 2020 and if you get/use the PMCC you may as well have the Docking Station. I never used the Intelligent Range Manager even once so far. At least the 400V option was inexpensive, if possibly useless.

Definately Adaptive headlamps, Homelink (incompatible with my gate/garage), smokers package, ambient lighting,.
Possibily panoramic roof.

I love the HUD.

Would skip Intelligent Range Mgr, skip Innodrive but keep ACC, and probably skip the passenger display.

This is mean! We weren't given the option to not get shitty no-season tires on the Turbo!

I'm still bitter that the Turbo S can get summer tires on the Mission E wheels, and the Turbo couldn't.

And to be on-topic, if I was ordering today, I'd drop the PMCC, but that wasn't a choice in 2020. I would've blown the money from that on the rear climate control, purely for the bling as I almost never have anyone back there. :p

I wish I got night vision instead of autopark. Auto park kinda works but is a gimik and takes 5 times as long than just parking yourself. Not worth it at all.

Passenger screen has been my biggest waste of a grand.

Thrilled I got air in the seats, back gets sticky without it in summer.

Passenger display and sport sound.
I‘m still waiting on my car. I got the passenger display because I road trip a lot and thought it would be useful for the passenger to be able to change music, use the nav, etc. Why do you both find it not worth the money? I guess it doesn’t matter because the car is already built, but I’m curious anyway.

no CarPlay on the 2nd monitor - PCM only - reduces the usefulness IMHO.

I am also adding the Pano roof to my do-not-order-again list. It starts getting sunnier in Northern California and today I found myself trying to protect my forehead from sun rays coming through the roof while driving. It was annoying at least. I want to clarify that the roof glass temperature was not warmer than the pillar areas covered with metal roof and fabric from the inside but the rays were bothering me and I can see it will only get worst in the summer. So no Pano roof next time if it is not a forced option.

I wish they didn’t bundle it with the premium package.
